Sabugal celebrates gastronomic tradition with the XVI Chapter of Bucho Raiano

The municipality of Sabugal, in Guarda, receives this Saturday, February 14th, the XVI Chapter of the Brotherhood of Bucho Raianoan initiative that brings together confraternities from various regions and focuses on the enthronement of new confreres and the valorization of one of the region’s gastronomic specialties.

The program starts at 10:30 am, at the Sabugal Municipal Auditorium, with a reception for participants and a test of ray flavors, followed, at 11:30 am, by the enthronement ceremony. The session includes a cultural moment with the play Tradition rulesthe Prayer of Wisdom and the oath of new confreres.

At 1:00 pm, the procession of confraternities takes place through the streets of the city. Lunch is scheduled for 1:30 pm, at ExpoSabugal, and will be served by the Casa da Esquila restaurant, under the command of chef Rui Cerveira.

Produced from seasoned and smoked pork meat in a natural casing, raiano tripe is traditionally consumed in winter and is an obligatory presence at the table during Shrovetide season, served with greens, boiled potatoes, black pudding and farinheira.
